Fudge Muffins
Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
2/3 cup milk
2/3 cup vegetable oil
2 eggs
2 teaspoons vanilla extract
1 cup of our delicious creamy Original Fudge Kitchen Chocolate Fudge, chopped into small pieces (about ½ inch in size).
Directions:
- Preheat oven to 425 degrees. Make sure your rack is in the center of the oven.
- Whisk together the flour, baking powder, and salt in a large bowl and set aside.
- In a medium bowl, whisk together the brown sugar, milk, vegetable oil, eggs and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Carefully fold in the chopped fudge pieces.
- Evenly divide the batter over a standard muffin pan with paper liners in the cups.
- Bake for 5 minutes at 425 degrees, then reduce the temperature to 350 degrees.
- Bake an additional 13 minutes or until a toothpick inserted into the center comes out with just a crumb or two on it.
- Let pan cool for 10 minutes
- Repeat with remaining batter.
Tip:
You can really use any basic chocolate chip muffin recipe. Feel free to use your favorite! Simply replace the amount of chocolate chips the recipe calls for with our fudge. |
