Fudge Muffins

 

Ingredients:

2 cups all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

2/3 cup milk

2/3 cup vegetable oil

2 eggs

2 teaspoons vanilla extract

1 cup of our delicious creamy Original Fudge Kitchen Chocolate Fudge, chopped into small pieces (about ½ inch in size).

Directions:

  1. Preheat oven to 425 degrees. Make sure your rack is in the center of the oven.
  2. Whisk together the flour, baking powder, and salt in a large bowl and set aside.
  3. In a medium bowl, whisk together the brown sugar, milk, vegetable oil, eggs and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Carefully fold in the chopped fudge pieces.
  6. Evenly divide the batter over a standard muffin pan with paper liners in the cups.
  7. Bake for 5 minutes at 425 degrees, then reduce the temperature to 350 degrees.
  8. Bake an additional 13 minutes or until a toothpick inserted into the center comes out with just a crumb or two on it.
  9. Let pan cool for 10 minutes
  10. Repeat with remaining batter.

Tip:

You can really use any basic chocolate chip muffin recipe. Feel free to use your favorite! Simply replace the amount of chocolate chips the recipe calls for with our fudge.
